Paso Creek Cabernet Sauvignon 2006
If you’ve read any of my posts you might have figured out I’m a very impatient wine consumer. I open, I taste. Letting a wine breath is not one of my virtues. But tonight I opened a bottle of Paso Creek Cab while me and Mrs. Dan got ready for a small New Year’s Eve gathering here at the house. The In-Laws and my friend Mark are coming over.
This was an expensive bottle I bought for presents that I never gave (expensive means more than $10). Mrs. Dan was ready. She didn’t have much time off for Christmas. She took time off but work kept creeping back in. She was ready for a glass. Very dry on first taste. She loves that. I was assigned to clean the counter tops, the bathroom, feed Mr. Ben, empty the trash and cook the shrimp. I didn’t exactly do it in that order but it got done. That also allowed the Paso Creek a chance to breath. After breathing a while the fruit presence came through. On first opening the dryness hid the fruit. I asked Mrs. Dan what she thought after it breathed. She said “delicious. Just what I’m looking for.”
It has a nice tingle on the tongue at the start and then smoothes out with a dry finish.
Hmmmmm. I need to write this down. Now that we have free babysitters near by I have a date wine when we finally have a date after a long, long time. The motto on the front says Bold character derived from stubborn patience. I think the mission was accomplished.
I’m off to try the shrimp and the hotwings before they get gone. Happy New Year early.
The bottle says we need to pair it with “big food and spirited conversation. “The In-Laws are here and we can spiritly discuss seeing Sherlock Holmes today. (A great flick if you aren’t looking for the generally accepted Sherlock Holmes as seen on PBS)
